Hyogo Prefecture, facing both the Seto Inland Sea and the Sea of Japan, has long enjoyed rich fishing grounds. As a result, the manufacture of fish cake products using fresh seafood is thriving, and the prefecture currently leads Japan in their production. According to legend, kamaboko (Japanese fish cakes) originated in Hyogo, when Empress Jingu devised the recipe in Ikuta Forest in Kobe. In recent years, their high-quality protein content has raised their profile as nutritious, traditional Japanese foods both in Japan and overseas.
